With over 15 years of experience in the world of ramen, Tadashi Yamada is a Japanese chef who is passionate about the art of noodles. Trained in Tokyo, he spent eight years in Germany as the manager of a specialised restaurant, helped launch a venue in the Netherlands and is currently based in Portugal.
His style combines tradition and creativity: he recreates authentic Japanese flavours using regional products and develops new recipes from scratch, always with attention to detail and quality. His hobby? Making handmade noodles while listening to classical music.
At Iberanime, Tadashi Yamada will be giving a workshop on mazesoba – noodles mixed without broth, coated in a soy-based sauce with chicken oil, topped with ingredients such as chashu (roast pork), egg, spring onions and naruto (fish paste).
